Diabetes-Friendly Diwali Sweets

With Diwali just around the corner, the season brings joy and festivities, often with a tempting array of sweets. Managing diabetes can make it challenging to enjoy these treats, but don’t worry!

Here are some diabetes-friendly recipes that allow you to indulge without compromising your health. These sweets use healthier ingredients and low-sugar options, so you can enjoy the celebrations without raising your blood sugar.

1. Coconut Karanji


Ingredients:

For the Covering

  • 1 cup emmer/khapli wheat flour  
  • 2 tbsp chickpea flour (besan)  
  • 2 tbsp cold-pressed oil  
  • 1/4 tsp salt  
  • Water (as required)

For the Filling

  • 1 tsp coconut oil  
  • 1 cup grated coconut  
  • 1/4 cup almond flour (or crushed almonds)  
  • 2 tbsp date paste  
  • A few drops of stevia  
  • 1/2 tsp cardamom powder  
  • 1/4 tsp nutmeg powder  
  • 1 tsp coconut oil (for brushing)

Method  


Filling

  • Heat coconut oil and toast the coconut lightly.
  • Toast almond flour separately.
  • Mix toasted coconut, almond flour, date paste, stevia, cardamom, and nutmeg.  

Dough

  • Mix flour
  • Salt and oil
  • Add water to form a sticky dough.
  • Rest for 30 minutes.  

Assembly

  • Divide dough into balls,
  • Flatten, fill, and seal
  • Air fry at 300°F for 8 minutes per side until golden.  
  • Serve warm or at room temperature.

2. Roasted Gram Dal Laddoo (चना दाल लड्डू )


Ingredients

  • 2 cups roasted gram dal flour  
  • 1/2 cup grated dry coconut  
  • 2 tbsp poppy seeds  
  • 1/4 cup roasted nuts and seeds (finely chopped)  
  • 1 cup soft dates (Medjool or Kimia, chopped)  
  • 1.5 to 2 tsp cardamom powder  

Method

  • Toast coconut and poppy seeds separately.
  • Grind roasted gram dal, coconut, poppy seeds, and cardamom together.
  • Mix in chopped dates and form into laddoos to make about 10 pieces.

Variations

  • Use chana dal instead of roasted gram dal by roasting it first.
  • For softer laddoos, soak dates in vegan milk for 2 hours before grinding.

3. Anarase


Dough Ingredients

  • 1 cup brown basmati rice (broken) 
  • 2 cups water  
  • 1/4 cup mashed dates  

For Anarase 

  • Cold-pressed peanut oil for frying 
  • Poppy seeds for coating  

Method  


Dough

  • Wash rice and soak it for 3 days, changing the water daily.
  • Dry rice, grind it into flour, and mix with mashed dates.
  • Let the dough ferment overnight.  

Cooking

  • Shape dough into disks, coat with poppy seeds, and fry on medium heat until golden brown.
  • Drain on paper towels and store.
